Ingredients

  • 1 clove garlic, chopped
  • 3 tablespoons oil
  • 1 cup onion, chopped
  • 1 cup rice
  • 2 cups hot water
  • 2 chicken bouillon cubes
  • 1/4 to 1/2 cup tomato sauce
  • 1 cup chicken, cooked
  • 1 cup corn, canned salt, to taste
  •  1 tomato, chopped

METHOD

  • Heat oil with garlic and onion.
  • Add rice, cook in oil until it turns white, stirring constantly.
  • Add water, bouillon cubes and tomato sauce.
  • Bring to boil.
  • Reduce heat to simmer, add chicken and corn.
  • Season to taste with salt.
  • Cook until most liquid is absorbed.
  • Add tomato and heat through.
