Ingredients

  • 1/2 cup yellow cornmeal
  •  1 1/2 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup shortening
  • 3/4 cup milk
  • 1 pound ground beef
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1 15-ounce can refried beans
  • 1 4-ounce can chopped green chile
  • 1 9-ounce jar or can taco sauce
  • 3 green onions, sliced
  • 2 cups shredded cheese, jack or cheddar

METHOD

  • Cut in shortening until mixture is crumbly.
  •  Mix flour, cornmeal, baking powder, and salt.
  • Mix in milk with fork until dough forms.
  • Turn dough onto floured board and knead until smooth.
  • Roll into 13-inch circle and place on ungreased cookie sheet or pizza tin.
  • Pinch edge to form l-inch rim.
  • Heat oven to 400 degrees F.
  • Meanwhile, cook beef and garlic in a skillet, breaking up meat into bits.
  • When meat is lightly browned, drain off excess fat.
  • Spread pizza dough with beans, then spread with meat mixture.
  • Layer on green chile, then taco sauce.
  • Sprinkle with onions.
  • Pour over taco sauce.
  • Top with cheese.
  • Bake for about 20 minutes, or until crust is golden brown and cheese bubbling.
