Mexican Stuffed Chicken

  • Stuffing
  • 1 whole fryer, ready to stuff.
  • 1 to 3/4 lb. lean ground chuck (depending on size of chicken)
  • 2 Tbsp. potatoes, finely chopped
  • 1 small clove garlic, crushed
  • 2 Tbsp. carrots, finely chopped
  • 2 Tbsp. frozen peas
  • 1 tsp. onion, finely chopped
  • salt


  • Mix stuffing ingredients together with the exception of the frozen peas.
  • Brown stuffing mix in a skillet to remove any redness from the meat.
  • Add peas.
  • Drain fat and stuff chicken with the mixture.
  • Butter top of the chicken lightly, then salt.
  • Place stuffed chicken in foil and wrap, first one way; then the other way with another piece of foil.
  • Place chicken in glass dish.
  • Bake at 400° for 1 hour.
  • Then bake for an additional 1-1/2 to 2 hours at 350°.
  • Test chicken for doneness by poking top of breast with a fork.
  • Serve for dinner with sliced cooked potatoes, carrots, salsa and warm tortillas.
  • Serves 4 to 5.
