Method For the topping
- When golden brown, add the onions, garlic and capsicum and sauté on a medium flame for 2 to 3 minutes, while stirring continuously.
- Heat the oil in a non-stick pan, add the sugar and allow to caramalise.
- Add the mixed herbs, salt and pepper, mix well and sauté on a high flame for another minute, while stirring continuously.
Remove from the flame, divide the mixture into 8 equal portions and keep aside.
How to proceed
Place a slice of bread on a flat dry surface, spread a portion of the topping evenly on the bread and top with 1 tbsp cheese and a few slices of olives.
Repeat with the remaining ingredients to make 7 more crostinis.
Bake in a pre-heated oven at 200°c (400°f) for 5 minutes or till the cheese melts.
