Crepes with Veggie Filling with Hot Potato Salad

  • 3 eggs 
  • 1 ½ cup milk 
  • 1 ½ cups flour 
  • 2 tbsp melted butter 
  • 3 cups cooked mixed vegetables 
  • 1 packet knorr creamy mushroom soup 


  • Heat a small pan. Add 2 tbsp batter to it. Tilt pan till batter spreads evenly 
  • Add all the (except for the filling) ingredients in a blender and whip till smooth (check for lumps). Transfer batter to a bowl.
  • Forms a thin layer. Pour extra batter back into the bowl.
  • Brown one side and then turn over to brown on second side. Make more such crepes, stack butter paper between each crepe and keep aside. 
  • For the fillings make soup with milk instead of water. Mix into vegetable and fill each crepe with the mixture. Roll up and serve hot.
