Ingredients

  • Fennel seeds 1 tbsp
  •  Ginger Powder 1 tbsp
  • Shahjeera 1 tbsp
  • Garlic cloves, minced 6
  • Pepper, red powder 1 tbsp
  • Cinnamon sticks 2
  • Cardamoms 6
  • Cloves 6
  • Bay leaf 1
  • Salt to taste
  • Saffron 1 tbsp
  • Yogurt plain 1 c
  • Paprika 1 tbsp
  • Pure hing 1 piece
  • Ghee 4 tbsp
  • Lamb, cut int large cubes 2 lbs

METHOD

  • Soak saffron in yogurt.
  •  Grind together the spices.
  • Heat ghee and fry the lump of hing
  • Add meat and sear on all sides, frying until well browned.
  • Pour in the yogurt and fry until liquid is absorbed.
  • Add a glassful of water and the spices.
  • Bring to a boil, reduce heat, and simmer, covered, until tender.
  • Remove cover and cook until liquid is gone.
