Ingredients

             Vegetables: 

  • 250 grams small potatoes
  • 150 grams sweet potatoes     
  • 250 grams yam
  • 350 grams brinjal      
  • 500 grams green peas
  • 200 grams green papdi seeds      
  • 2 banana

    For the masala:
     
  • 2 cup cilantro leaves      
  • 5-6 tablespoon green chili paste
  • 1 cup grated coconut     
  • 1 teaspoon turmeric (haldi) powder
  • 3 tablespoon red chili powder      
  • 2 tablespoon coriander (dhania) seed powder
  • 2 tablespoon cumin (jeera) seed powder      
  • 1 teaspoon asafoetida (hing)
  • 2 tablespoon sugar      
  • ¼ cup green powder
  • 2 tablespoon black garam masala       
  • grind the masala to paste.

    For the Muthia balls:
     
  • 500 grams wheat flour     
  •  50 grams split black grams (urad)dal flour,
  • 1/2-cup green fenugreek (methi) leaves      
  • 1 tablespoon green chili paste
  • 2 teaspoon sugar      
  • 1 tablespoon lemon juice,
  • ½ teaspoon soda      
  • 1 teaspoon turmeric (haldi) powder
  • 1 cup oil      
  • ½ teaspoon asafetida (hing)
  • 1 tablespoon Red chili powder      
  • Salt to taste 

    For the baghar:
     
  • ½ cup oil      
  • 2 teaspoon mustard (rai) seeds
  • 1 teaspoon asafetida
  • Salt to taste 

METHOD

  • Chop leafy fenugreek (methi).
  •  Shift both the flours.
  • Mix all other ingredients in the flour.
  • Add 3-4 tablespoon. Oil.
  • Knead the flour with water to a puri-like consistency.
  • Make balls and fry in deep oil.
  • Cut brinjal into four and fill the masala.
  • In a frying pan take oil and add mustard (rai) seeds.
  • When, they crackle add asafetida and make a layer of papdi, over it put it peas and a layer sweet of sweet yam.
  • After 10 minutes add stuffed brinjal.
  • Then again sprinkle masala over it.
  • Cover the pot with a plate and add water in the plate.
  • After 10 minutes put bananas pieces. Stir.
  • After 15 minutes add balls and again sprinkle masala.
  • When all the vegetables are cooked remove and serve with puri or parathas.
