Masala Bhaat Spiced Vegetable Rice

  • 2 medium potatoes
  •   2 Cups Long grain rice
  • 2 medium onions
  • 2 Green chilies- split and cut in strips
  • ½ teaspoon Turmeric (haldi) powder 
  • 1 teaspoon Red chilly powder 
  • 1 ½ Teaspoon Garam masala 
  • 10 nos Pepper corns 
  • 1 nos Tej patta 
  • 8 nos Curry leaves 
  • 6 nos Lavang (cloves)
  • 2 sticks Cinnamon (dalchini) 
  • 4 Tablespoons Cooking oil 
  • 2 Teaspoon Pure ghee 
  • Salt to taste 
  • 4 Cups Boiled water

    For Garnishing
  • 2 Teaspoons Shredded coconut  
  • 3 Tablespoons chopped Green coriander (dhania) leaves


  • Step 1:     Peel potatoes and onions and chop into one inch cubes. 
  •  Step 2:     Wash the rice and drain off excess water. Allow rice to dry for ten minutes. 
  • Step 3:     Add oil to a cooker pan, when hot, toss peppercorns, tej patta, cloves, cinnamon (dalchini) and curry leaves(kadi patta). 
  • Step 4:     Fry lightly and turn down the heat. 
  • Step 5:     Add potatoes and onions and stir it for two minutes. 
  • Step 6:     Add rice and stir the mix for sometime till the rice gets coated in oil. 
  • Step 7:     Add garam masala and red chilly powder and turn on the heat. 
  • Step 8:     Add water and cover the vessel, let the steam escape after a minute or so and now place a weight on the lid pressure cooking the rice. 
  • Step 9:     After the third whistle, turn off the heat. 
  • Step 10:     Add ghee and garnishing to the rice and serve
